A little bit about Phil
Phil moved to the Sunny Coast in 2010 from Toowoomba where he started his chef apprenticeship. After discovering Spicers Tamarind were looking for a 2nd year apprentice, Spicy decided to work in Traditional Thai food and was at Spicers for 9 years! Hence the Nickname ‘Spicy Phil’.
Looking for a different opportunity he found himself in the Sous chef position at Brouhaha Brewery and worked with James Ostridge and the team for 2 years before stepping up as Head chef in 2019. Spicy loves incorporating his Asian pallet to the amazing local produce and matching it with the award winning beers we make.
Spicy has seen us through a couple of the “tough” years in hospitality and has kept the Brouhaha Maleny Restaurant as one of the top destinations on the Sunny Coast. If we could clone him, we would…
Phil's favourite beer?
For myself I would say that IPA styles are my favourite. As I have been trained with Asian cuisines I found these beers best pair with Thai, Chinese and Japanese foods the best. The hops and malt profiles balance the flavours very nicely. I find they are best for braising the Maleny Wagyu also.
